Tea
1-3 minutes at 158°F (70°C)
This is a very rich green tea that is packed with flavor. It suprisingly has more of a roasted flavor than I would expect from a green tea while remaining mildly sweet. Anyone who enjoys natural green teas, is sure to enjoy this one.
Grown in Anhui Province, Eastern China at 900 meters in an area of heavy mist and cloud cover with cold temperatures and short periods of sunlight, its total annual production does not exceed 50kg. The hard environment combined with fertile soil yields very vibrant and healthy plants and, although they produce a low yield, each leaf is packed with nutrients and flavour. The tea is only harvested in early spring. After picking, it is withered until soft and then pan-fired in a wok to arrest any further oxidation. The pan-firing softens the leaves further, allowing them to be shaped by gentle hand-pressing. The tea is then very gently roasted until dry over charcoal fire.
